Whiskey makers mill grain, mash it in hot water to convert starch to sugar, ferment the mash with yeast, distill the resulting beer to concentrate the alcohol, age the new spirit in oak barrels, and blend and bottle the finished whiskey. Every whiskey in the world, from Kentucky bourbon to Florida rye, follows these six steps.

Step 1: Grain Selection and Milling

Whiskey starts as cereal grain: corn, rye, wheat, or malted barley. Distillers call their grain recipe a mash bill, and that recipe drives the flavor of the finished whiskey more than any other early decision. Each grain contributes something different.

Step 2: Mashing

Mashing means cooking the milled grain in hot water. Heat gelatinizes the starch, and enzymes, either naturally present in malted barley or added by the distiller, convert that starch into fermentable sugars. Different grains gelatinize at different temperatures, so distillers cook the mash in stages. They typically start with corn at the highest temperature, then add rye, wheat, or barley as the mash cools. The process creates a sweet, porridge-like liquid ready for yeast.

Step 3: Fermentation

Distillers add yeast to the cooled mash, where it consumes the sugars and produces alcohol and carbon dioxide over roughly 3 to 5 days. The finished product, often called distiller’s beer or wash, usually lands somewhere in the range of 7 to 10 percent alcohol. Fermentation creates much of a whiskey’s underlying fruit and spice character because yeast produces hundreds of flavor compounds alongside the alcohol.

Step 4: Distillation

Distillation separates alcohol from the wash using heat. Because alcohol boils at a lower temperature than water, the alcohol vapor rises first. The still collects that vapor and condenses it back into liquid. Distillers make cuts during the run, keeping the flavorful heart of the spirit and setting aside the harsh early heads and oily late tails. US law requires whiskey to come off the still below 190 proof, and bourbon and rye below 160 proof, which forces the spirit to retain grain character rather than become neutral alcohol.

Step 5: Barrel Aging

New whiskey goes into oak barrels, where it picks up color, vanilla, caramel, and spice from the wood while slow oxidation softens harsh notes. Bourbon and rye must age in new charred oak containers and enter the barrel at 125 proof or less. Climate matters enormously here. Heat drives the spirit deeper into the wood and speeds extraction, which makes barrel location and warehouse conditions as important to the recipe as the grain.

Step 6: Blending and Bottling

Very few whiskeys come from a single barrel. Most distilleries blend many barrels together for consistency and balance, then proof the whiskey down with water and bottle it at a minimum of 80 proof. Blending takes real skill, and this final step determines whether a distillery’s house style comes together or falls apart. Timber Creek Distillery, a grain-to-glass distillery on a 240-acre family farm in Crestview, Florida, does the opposite.
