What Is Vodka Made From?

Some producers also use grapes, sugar beets, or whey. Vodka reaches near purity during distillation, so the base matters less than it does in whiskey. Still, each base leaves a small fingerprint. Wheat tastes soft and clean. Corn brings faint sweetness. Rye adds subtle spice.
Fermentation
Distillers cook the starch source and convert it to sugar. Then they add yeast, which ferments the sugar into alcohol. This step works much like whiskey production.
The result is a low-alcohol wash, usually under 10 percent alcohol. From there, vodka and whiskey take different paths. Whiskey distillers protect grain flavor. Vodka distillers remove almost everything except ethanol and water.
Column vs Pot Distillation
A simple pot still struggles to reach 190 proof. For that reason, most vodka producers use column stills. A column still performs the work of many distillations in one continuous pass.

Filtration
After distillation, many producers filter the spirit. Most use activated charcoal. Filtration polishes trace congeners and smooths the texture.
Law does not require filtration. It comes down to style. Some distillers filter heavily for maximum neutrality. Others filter lightly, or skip it, to preserve subtle base character.
Why Does Vodka Taste Neutral?
Vodka tastes neutral because high-proof distillation removes nearly everything except ethanol and water. At 190 proof or higher, the spirit carries only trace flavor compounds. Those compounds, called congeners, give whiskey, rum, and brandy much of their character.
