Pensacola Vodka

Pensacola Vodka is a Florida-made corn vodka distilled at Timber Creek Distillery in Crestview, about an hour east of downtown Pensacola. It is the vodka for the Panhandle’s oldest city: a classic, stirred-drink spirit for a town of brick streets, a working Navy base, and bars that have been pouring martinis since before the rest of the coast had a stoplight.

A vodka for Pensacola’s classic-cocktail bars

Pensacola has a longer memory than the beach towns to its east. The Spanish tried to settle it in 1559, it has flown five flags, and Naval Air Station Pensacola has trained aviators since 1914. The drinking culture follows suit: downtown Palafox Street leans toward stirred, spirit-forward classics, and a vodka has to stand on its own in a martini or a gimlet rather than hide behind juice. Corn vodka earns that seat because copper pot-still distillation leaves it with real body and a rounded texture, so a stirred drink tastes full instead of thin and hot.

Pensacola Vodka is distilled from Florida-grown corn and Florida limestone spring water in Crestview and bottled at the distillery. Same water, same still, same farm as every Timber Creek spirit.

What does Pensacola Vodka taste like?

Pensacola Vodka is soft, clean, and slightly sweet, with more body than a column-still vodka.

Nose

Clean and restrained, with light corn sweetness and a mild mineral note from the limestone spring water. No solvent character, no artificial notes.

Palate

Smooth and slightly sweet on entry, with corn character through the mid-palate. Rounder than wheat vodka, with more weight from pot-still distillation.

Finish

Clean, brief, and soft. Mild sweetness fades to gentle warmth with no lingering bitterness.

Palafox Street classics

Martini, stirred: 2.5 oz Pensacola Vodka, 0.5 oz dry vermouth, stirred 30 seconds and strained with a lemon twist. The corn body makes a rounder martini than wheat; skip the shake so you keep the texture.

Gimlet: 2 oz vodka, 0.75 oz lime cordial, shaken and served up. The Navy’s old scurvy cure, minus the gin.

Espresso Mule: Vodka, cold brew, and ginger beer for a late night on the waterfront.

Vodka on the rocks: One large cube, slow dilution. This is the honest way to judge a vodka, and the corn sweetness shows more as it warms.

Corn vodka or wheat vodka?
