Pensacola Spiced Rum
Pensacola Spiced Rum is a Florida-made spiced rum distilled at Timber Creek Distillery in Crestview, about an hour east of downtown Pensacola. It is the Navy-town rum: an unfiltered, copper pot-still molasses rum with natural spice, made for a Navy Grog, a hot buttered rum on a January night, and the city that has trained naval aviators since 1914.

Rum’s oldest tradition, in a Navy town
Rum was the daily ration of the British Royal Navy for more than 300 years, and the word grog comes from the watered, limed version sailors were issued from 1740 until the tradition ended in 1970. Pensacola, the Cradle of Naval Aviation and home to Naval Air Station Pensacola and the Blue Angels, is the Panhandle city where that history still feels close. A spiced rum for Pensacola should taste like rum first. Pensacola Spiced Rum starts as Timber Creek’s Florida Rum, double-distilled from food-grade molasses in a copper pot still, then takes a natural spice infusion and is bottled unfiltered, with no artificial flavoring.
What does Pensacola Spiced Rum taste like?
Pensacola Spiced Rum is warm, layered, and moderately sweet, with real molasses character under the spice.
Nose
Warm spice aromatics lead, layered rather than single-note, over the rum’s natural molasses sweetness and a subtle vanilla warmth from the base.
Palate
Smooth entry with the molasses base as a sweet foundation. Spice builds through the mid-palate without turning aggressive. Unfiltered and made from food-grade molasses rather than blackstrap, it carries more character than industrial spiced rums at the same proof.
Finish
Warm and moderately long. Spice and light oak warmth linger, and the finish stays clean rather than sugary.
Grog, toddies, and the classics
Navy Grog: Spiced rum, lime, grapefruit, honey, and a little soda over crushed ice. The tiki-era update of the sailor’s ration.
Hot Buttered Rum: Spiced rum, butter, brown sugar, and hot water. The spice infusion means you can skip half the spice cabinet.
Daiquiri, spiced: Rum, lime, and sugar, shaken hard. Drier than you expect and a good way to taste the base.
Spiced rum, neat, after dinner: The unfiltered base and natural spice are meant to be sipped. A short pour with a square of dark chocolate.
What makes this different from an imported spiced rum
Most spiced rum is an industrial column-still spirit, sweetened, artificially flavored, and relabeled a long way from where it sells. Pensacola Spiced Rum is made an hour east of the city from a base rum you can taste unspiced at the same distillery. Both the spice and the process are transparent. What is the difference between Pensacola Spiced Rum and Florida Rum?
Florida Rum is the clear, unspiced base spirit — food-grade molasses, double-distilled, unfiltered. It starts with the same base and adds a natural spice infusion, which adds warmth, complexity, and the characteristic spiced rum profile. Florida Rum is more cocktail-versatile; the spiced version is better suited for applications where you want the spice character to contribute.
