Timber Creek’s whiskey is aged slowly and intentionally in the Florida Panhandle, leveraging our climate, solar-powered infrastructure, and barrel selection to produce bold, flavorful spirits.

Barrel selection and control

We use a mix of 15-gallon and 53-gallon new American white oak barrels, primarily sourced from McGinnis Wood Products, with 2–3 year air-dried staves and a standard #3 char. Smaller barrels extract oak flavor more quickly, giving us precise control over the balance between grain and barrel character.

Time in barrel

Most of our whiskey is aged between 5 and 6 years. We taste throughout the process to monitor flavor development — especially important because each grain is distilled and aged separately before blending.

Florida climate advantage

Unlike Kentucky distillers, we don’t need steam-heated rickhouses. Florida’s warm, humid climate keeps the spirit actively aging year-round. Whiskey typically stops aging below 40°F, but cold snaps in the Panhandle are rare and brief — our barrels stay active longer, deepening wood interaction.

Off-grid aging

Our rickhouses run entirely on solar energy. We don’t artificially heat or cool them, but the structure moderates temperature swings and supports consistent aging throughout the year.

A cucumber ribbon or lemon twist garnish suits the gin’s own botanical notes better than an olive would.

Yes — all of Timber Creek Distillery’s spirits are gluten-free, including our bourbons, vodka, rum, rye, single malt whiskey, and gin.

This is due to the distillation process itself. Even though many of our products are made from grains like wheat, rye, or barley (which contain gluten in their raw form), the distillation process removes gluten proteins entirely, making the final product safe for individuals with gluten sensitivity or celiac disease.
