About the Vesper

The Vesper at Timber Creek Distillery is a stirred cocktail built on two of the distillery’s own spirits, Timber Creek Florida Gin and Timber Creek Florida Vodka, combined with Lillet Blanc and finished with a lemon twist in a chilled coupe. It follows the familiar gin, vodka, and Lillet structure of a well known dry cocktail, here made entirely with Timber Creek’s own base spirits. The gin carries most of the botanical character, while the vodka adds body and length without introducing competing flavors, and the Lillet Blanc rounds everything out with a soft, honeyed floral note. Because both the gin and the vodka are distilled grain-to-glass on the Crestview farm, the drink has a clean, unified grain character running through it rather than the disjointed feel that can come from blending spirits with very different production styles.

To build the Vesper, stir the gin, vodka, and Lillet Blanc together with ice until well chilled and slightly diluted, then strain into a chilled coupe. Express a lemon twist over the surface for a final citrus note before serving. Its clean, dry profile pairs naturally with oysters, smoked salmon, and olives, and it also holds up well alongside shrimp cocktail or caviar for a more elegant occasion. Because this cocktail is built from two Timber Creek spirits plus a single modifier, ingredient quality carries most of the weight; use a fresh bottle of Lillet Blanc, since an older, oxidized bottle will taste flat and drag the whole drink down with it.

Serve it in a properly chilled coupe and drink it soon after pouring, since a cocktail this spare and spirit driven loses some of its polish once it starts to warm past its ideal serving temperature.
