The fruit does a lot of the flavor work in this one, pineapple juice brings tropical sweetness while lime juice keeps things from tipping too far into candy territory, but the gin still needs to hold its own underneath all that juice. Timber Creek’s Florida Gin, distilled from grain through the distillery’s PureBlend process and blended by individual component after barrel time, has enough botanical presence to come through even against a fairly juice-heavy build, which is part of why it works well here instead of disappearing entirely.

To build it, shake the gin with the pineapple and lime juice over ice until well chilled, then strain or pour into a glass filled with fresh ice. Finish by slowly drizzling grenadine down the inside of the glass, it will sink and pool at the base rather than mixing immediately, creating the layered sunrise look the drink is named for.
