About the Aged Daiquiri
Strip a cocktail down to three ingredients and there is nowhere for a mediocre spirit to hide, which is exactly why the Aged Daiquiri works so well with Timber Creek’s Barrel Aged Florida Rum. Lime juice and demerara syrup are the only other ingredients, and both are there to frame the rum rather than compete with it. The classic Daiquiri is usually made with a light, unaged rum, so building this version with a barrel aged spirit changes its character noticeably.
Instead of a crisp, purely citrus forward drink, you get something with more weight and a caramel undertone running beneath the lime, a direct result of the time this rum spends in barrel as part of Timber Creek’s PureBlend process, where each component is aged individually before blending. Demerara syrup, made from raw cane sugar rather than white sugar, was chosen deliberately here too, since its molasses notes echo the rum’s own barrel character instead of flattening it out with plain sweetness. To build it, combine the rum, lime juice, and demerara syrup in a shaker with ice and shake hard until well chilled, roughly ten to fifteen seconds.
Strain into a chilled coupe glass and garnish with a lime wheel set on the rim. There is no soda, no dilution beyond the shake, so the ratios matter more here than in a longer drink, and it is worth measuring carefully rather than eyeballing it. Its bright acidity and underlying richness make it a strong match for the FoodPairings on this recipe, ceviche and grilled shrimp, where the lime in the glass mirrors the citrus typically used in the dish itself.
This is a small, potent drink meant to be finished slowly rather than in a couple of gulps. Take your time with it, and drink within your means.
